Glarner Birnbrot

The pear bread is a traditional pastry from the Swiss Alps and foothills of the Alps with a filling of dried pears, which is also known in the Glarus region.
In addition to pears, the filling contains sultanas, walnuts and often figs and dried apple slices. It is seasoned with candied orange peel, candied lemon peel, coriander, cinnamon, star anise, anise, and cloves, as well as pomace, kirsch or wine.
Originally, pear bread was a bread variant of poor people who used dried fruits to stretch the expensive bread grain from the lowlands with dried fruits in the Alpine and foothills of the Alps and foothills of the Alps, which lived mainly from livestock farming.
In the Glarus version of pear bread, the pears are cooked and strained before being mixed with the other ingredients. Today, however, pear bread is available throughout the year.
